The puréed mushroom and miso combo not only makes for a super creamy, hearty, comforting soup, but also provides a wicked one-two punch in fighting disease and boosting the immune system. Move over chicken noodle, creamy crimini miso is guaranteed to prevent and fight off any cold, flu, and even harmful disease. Kiss belly bloat buh-bye and make room for all those immune boosting cells!
Ingredients:
• 2 Tbsp (25 mL) extra virgin olive oil
• 4 1/2 cups (1.1 L) crimini mushrooms, sliced (about 3/4 inch/2 cm)
• 3 garlic cloves, chopped, plus 1 whole clove
• 4 cups (1 L) vegetable broth
• 2 Tbsp (25 mL) yellow miso paste
• maitake, shiitake, and white button mushrooms, for crisping, optional
• truffle oil
Directions:
Heat the oil in a medium soup pot, then add mushrooms. Sauté until they start to release their moisture, then add garlic and sauté another 30 seconds. Add vegetable broth and miso paste. Bring to a boil, then reduce heat and simmer 5 to 10 minutes.
While the soup is heating, crisp up slices of crimini and other mushroom slices by sautéing them in a small amount of olive oil until well browned and crisp.
Pour soup into a blender and add remaining garlic clove. Blend about 15 to 20 seconds, until no solid pieces remain. Return to pot.
Serve in bowls, topped with crisped mushrooms and a drizzle of truffle oil.
