This traditional Greek Salad recipe has been a family staple for as long as I can remember! Growing up my parents had a huge vegetable garden in our backyard filled with many things, but mostly filled with tomatoes, cucumber, banana peppers and onions – which makes the base for this perfect summer salad.  Being in Greece last month, I ate this every single day (sometime 2x per day!). The freshness of the locally grown produce just doesn’t compare. The tomatoes there were SO sweet and juicy! As were the cucumber. And the feta… out of this world.

Here’s me in Mykonos showing how easy it is to make this simple and delicious dish. Gosh How I wish this was Kitchen every day!

Ingredients:

  • 1 cucumber, chopped
  • 4-5 ripe, roma tomatoes, chopped
  • 1  large bell pepper (green, red, yellow or orange, or 2 smaller banana peppers), sliced
  • 1/2 red onion, sliced
  • 1/3 cup Kalamata olives, pitted
  • 1 block goats milk feta cheese
  • 1 handful sunflower sprouts (optional)
  • 3 Tablespoons Extra Virgin olive oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 tsp dried oregano
  • Sea Salt and Pepper to Taste

Directions:

Add tomato, cuke, onion, olives and pepper to bowl. Top with feta cheese. Drizzle with olive oil and vinegar. Then season with salt, pepper and oregano. Mix up and enjoy!
