These cookies are your bone-building BFFs. They are super high in calcium (WAY more calcium than milk) plus are rich in healthy fats that give your skin the glow. Nothing refined about these treats – just plant-based deliciousness!
Ingredients:
- 1 cup tahini
- 1/2 tsp cinnamon
- 1/2 cup coconut sugar
- 2 Tbs ground chia (mixed with 1/3 c water)
- 1 cup rolled oats*
- 1 cup coconut flakes, unsweetened
- 1/4 cup raisins
- 1/4 cup cacao nibs
- 1/4 cup chocolate chips
- 1/3 cup walnuts, chopped/crushed
- pinch sea salt
*you can replace rolled oats with quinoa flakes for those with severe gluten-intolerance/celiac
Directions:
Pre-heat oven to 350. In a large bowl, mix tahini, chia mixture cinnamon, coconut sugar, pinch sea salt until well combined, then mix remaining ingredients. you might want to get in there with your hands to ensure it’s well combined and dough-like consistency is formed. roll into golf-size balls in your hands, then press flat on cookie sheet lined with parchment paper or greased with coconut oil. smooth top and form into rounds. Bake until golden, about 20minutes. Let cool completely before eating.
NOTE: If you don’t have tahini, you can use almond butter (or any nut/seed butter)
Nutritious benefits:
- Tahini one of highest sources of Calcium (ounce for ounce roughly 5x more calcium than milk!). Also a great source of magnesium which aids in the absorption of calcium.
- cinnamon also super high in calcium! It adds a natural sweetness helping to regulate blood sugar levels and super alkalizing which contributes to bone health.
- cacao nibs are one of the highest plant-based sources of magnesium. Magnesium required to absorb and utilize calcium
