You won’t buy a store-bought fudge-pop again after you try THIS! The avocado (which you won’t taste. Really.) provides the heart healthy, beautifying creamy, richness and is masked but the chocolatly goodness. Perfect for kids, and the adult kid-at-heart.
Ingredients:
- 1 really ripe avocado
- 1 3/4 cups (425 mL) vanilla coconut milk
- 1/4 cup (60 mL) + 1 Tbsp (15 mL) cocoa powder
- 1/2 cup (125 mL) coconut sugar (or maple syrup)
- 2 tsp (10 mL) vanilla extract
- 2 tsp (10 mL) coconut oil
- 1/2 tsp (2 mL) salt
Scoop out avocado into a food processor. Add remaining ingredients and process until smooth. Pour the filling into popsicle molds. Freeze for 30 minutes, then insert popsicle stick and continue freezing overnight (or at least 3 hours).
