I love salads. I really do. And this is a definite staple – and a hearty meal right on it’s own. The nuts, seeds and sprouts pack a mean protein punch (and great crunch). The avocado and hemp seeds provide creaminess and essential fats, and the crispy freshness of the red bell peppers, sprouts and greens, makes this a party explosion of flavour and textures! Hope you enjoy it as much as I do!
Ingredients:
- 4 cups mixed greens
- 2 cups sunflower sprouts
- 1/2 cup small sprouts, such as broccoli or alfalfa
- 1 ripe avocado, cubed
- 1/2 cucumber, chopped
- 1 red bell pepper, chopped
- 1/4 cup arame, broken into pieces
- 2 Tbs raw pumpkin seeds, lightly toasted on stove
- 2 Tbs raw walnuts, chopped
- 2 Tbs hemp seeds
- 1/2 tsp kelp granules
Add all ingredients into a large bowl and drizzle with dressing
Vinaigrette Dressing:
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- Juice of 1/2 lemon
- 1 Tbs dried oregano
- 1 Tbs dijon mustard
- sea salt and black pepper to taste
- Optional: 1-2 Tbs of hummus (my secret – or not so secret ingredient) to make the dressing extra creamy!!
Add all ingredients to a bowl and whisk together. Then drizzle on salad.

I’m super interested in trying this but my only question is where would I buy arame? I’ve never had it before so I’m at a total loss of where to buy something like that. Congrats on the show and the new book! I look forward to reading it when it becomes available!
Hi Evelyn! Thanks so much!! 🙂 You can find arame in most health food stores, depending where you are located. You’ll find it where ever they sell Nori (which is the sushi rolling sheets!) It’s thin and stingy. If you can’t find it, you can omit it and the salad will still be delish and nutrish!
