This hearty legume and black bean chilli is guaranteed to warm you up on a cold day! The lentils provide a high iron boost to help increase energy during the shorter winter months and the spiciness is sure to warm you up from the inside out!
Ingredients:
1 large onion, chopped (or 2 small-medium onions)
2 red bell peppers, seeded and chopped
2 stalks celery, chopped
2 carrots, chopped
3 (cloves) garlic, minced
2 (cups) lentils, cooked
1 (cup) chickpeas, cooked
1 (cup) black beans, cooked
4 (cups) crushed tomatoes
1/2 (teaspoon) sea salt
1/2 (teaspoon) ground black pepper
2 (tablespoons) chili powder
2 (teaspoons) ground cumin
Topping:
1 (tablespoon) pumpkin seeds , toasted
1 (teaspoon) hemp seeds
Directions:
- Sautee onions until tender in large pot over medium heat.
- Add garlic, peppers, celery, carrots and season with oregano, salt and pepper and sautee untill vegetables are cooked through.
- Add tomatoes, cumin, chili powder and beans.
- Bring to a boil then, reduce heat to low. Simmer 45 minutes.
- Sprinkle pumpkin and hemp seeds on top as garnish.
