Have some left-over cooked quinoa kicking in your fridge? Try this super easy, super quick and refreshing quinoa salad

Ingredients:

  • 2 cups cooked quinoa
  • 1 cup grape tomatoes, halved
  • ½cup cucumber, diced
  • ½cup Kalamata olives, pitted and chopped
  • 1/4 cup extra virgin olive oil
  • 1 Tbsp oregano
  • squeeze lemon wedge
  • sea salt and pepper to taste

Directions:

Add all ingredients to a bowl and mix well. Refrigerate before serving.
