Ingredients:
- 2 cups cooked quinoa
- 1 cup grape tomatoes, halved
- ½cup cucumber, diced
- ½cup Kalamata olives, pitted and chopped
- 1/4 cup extra virgin olive oil
- 1 Tbsp oregano
- squeeze lemon wedge
- sea salt and pepper to taste
Directions:
Add all ingredients to a bowl and mix well. Refrigerate before serving.
