If you’re looking for a meatless meal this is the perfect fix for both herbivores and carnivores alike!  Not only the meatiness of the mushrooms satiate cravings, but the are one of the most powerful foods around. Mushroom are a rich source of beta glucans which active your body’s fighter cells preventing disease and infection.  And they are one of the few plant-based foods that contain vitamin D. Plus, the garlic-y cali mash further boosts the immune system without the guilt!

For the Kebabs

Ingredients:

¼ cup EVOO

2 garlic cloves, minced;

½ teaspoon  sea salt;

2  portobello mushrooms, cut into 1″ pieces

2 red peppers cut into 1” pieces;

1 red onion, cut into 1” pieces;

Directions:

Preheat grill or barbecue and soak eight large wooden skewers in water for 20 minutes. In a small bowl, whisk together olive oil, garlic and sea salt; set aside. Thread a shiitake mushroom onto the skewer followed by a piece of red pepper and a chunk of onion. Repeat until the skewer is full. Repeat threading the remaining vegetables onto the rest of the skewers. Brush skewers with olive oil and garlic marinade and grill, turning occasionally, until warmed through. Serve immediately with Garlic Mash.

For the Garlic Mash

Ingredients:

1 cauliflower, cut into florets;

2 cloves garlic, minced;

¼ cup EVOO;

¼ teaspoon  sea salt;

½ teaspoon  ground cumin;

2 Tbs chopped fresh chives;

Directions:

Steam cauliflower and parsnip until tender, approximately 10 minutes. Add to blender with remaining ingredients (except chives) and blend until smooth.

Stir in chives.

For the Mushroom Gravy

Ingredients:

1 Tbs coconut oil

2 cloves garlic, minced

1 cup shiitake mushrooms, chopped

1 cup crimini mushrooms, chopped

1 cup button mushrooms, chopped

1/2 tsp chia seeds, ground

1 cup veggie stock

sea salt and black pepper to taste

Directions:

Heat coconut oil on medium heat. Add garlic and mushrooms and sauté until mushrooms have browned. Add HALF the mushroom mixture into blender and blend until smooth. Add ground chia and continue blending until well combined. Pour into bowl and stir in remaining mushrooms. Serve over Garlic Cauli Mash.
