Suffer from acne prone skin? This sweet potato salad may help. Sweet potatoes are rich in vitamin A, which helps normalize oil production in the skin, is anti-inflammatory AND helps fight off acne-causing bacteria. It also encourages the turnover of skin cells, which helps keep follicles free and clear, a crucial step in preventing acne.  Pumpkin Seeds are rich in zinc, which helps Acne is often associated with a zinc deficiency. A quarter cup of raw pumpkin seeds provides just over half that recommended amount of zinc required to fight acne. In addition, the zinc helps to sooth inflamed skin, regenerate skin cells, and speeds up the healing process of acne.

For the Salad:

  • 1 large sweet potato
  • 4 cups chopped romaine lettuce
  • 1/4 cup pumpkin seeds
  • Sea salt & cayenne pepper to taste

For the Dressing:

  • juice of one lemon
  • 3Tbs melted coconut butter
  • 1/4 cup softened pumpkin seed butter
  • Sea salt & Pepper to taste
  1. Scrub the skin of one large sweet potato, then halve and slice it just under one centimetre thick.
  2. Brush with coconut oil then roast in the oven at 375 F with sea salt and cayenne pepper for 30-40 minutes or until tender and browned.
  3. Add four cups of chopped romaine lettuce to a large bowl.
  4. In a small bowl combine the juice of one lemon, three tablespoons of melted coconut juice and a quarter cup of softened pumpkin seed butter. Season with salt and pepper to taste.
  5. Add roasted sweet potatoes on top of romaine, drizzle on dressing and sprinkle on pumpkin seeds.
  6. Toss and re-season if needed.

  1. I tried this recipe today, and I loved it. Ok, wait a minute … it wasn’t the recipe exact, I didn’t have all the ingredients but I improvised. It was definitely different from what I typically eat, but I enjoyed every bite. I didn’t have the ingredients to make the dressing, so instead I just squeezed fresh lemon and sprinkled pepper over the salad/sweet potatoes. Instead of pumpkin seeds, I used almonds. So maybe it wasn’t quite the recipe but again, it was healthier than what I would’ve eaten. I need to go grocery shopping.
