The perfect comfort dish – And great for balancing your blood sugar too!

Recipe:

3 medium onions, chopped;

2 green bell peppers, seeded and chopped;

2 red bell peppers, seeded and chopped;

2 stalks celery, chopped;

2 carrots, chopped;

4 cloves garlic, minced

2 (15.5 ounce) cans black beans, drained;

2 (15.5 ounce) cans red kidney beans, drained;

2 (15 ounce) cans crushed tomatoes;

1/2 teaspoons sea salt;

1/2 teaspoon  ground black pepper;

2 tablespoons chili powder (or to taste);

2 teaspoons ground cumin;

2 tablespoons dried oregano

Directions:

Sautee onions until tender in large pot over medium heat.  Add garlic, peppers, celery, carrots and season with oregano, salt and pepper and sautee untill vegetables are cooked through.  Add tomatoes, cumin, chili powder and beans.  Bring to a boil then, reduce heat to low, and simmer 45 minutes.
