This Pesto is loaded in omega 3s, protein and flavour! It goes great served on cooked quinoa, brown rice pasta, or zucchini linguini for a low-cal take!
For the Pesto:
Ingredients:
- ½ cup Walnuts
- 1 Tbs Hemp seeds
- 2 Cups Fresh basil
- 3 cloves Garlic
- ½ cup extra virgin olive oil
- 1 tsp sea salt
Directions:
Add all ingredients to food processor and process until well combined.
Assembly:
Add 1-2tbs of pesto to 1 cup of cooked quinoa, pasta or zucchini linguini and mix until well combined. Top with fresh cherry tomatoes, Calamata olives and sundried tomatoes. Enjoy!Zucchini Pasta in walnut hemp seed pesto with Sundried Tomatoes and Kalamata olives

You can use a spirooli slicer: http://www.upayanaturals.com/Vegetable_Spiral_Slicer_formerly_Spirooli_Slicer_p/wc-0001.htm OR you can use a potato peeler by peeling the zucchini from top to bottom, working around the until zucchini until you get to the core making long ribbons.
