Use this secret-superfood to turn your fresh berries into a guilt-free jam!

Looking for new ways to take advantage of the fresh, seasonal fruits and berries? Why not make a guilt-free jam! Free of additives, preservatives and added sugars – this recipe showcases the flavours of freshness, is super-simple to make AND can improve your complexion, lower cholesterol and reduce inflammation at the same time! The secret? Chia Seeds!Chia seeds (Salba) boost a plethora of antioxidants and other nutrients, such as omega 3’s, calcium and iron, and contain the highest source of plant-based fiber helping to further reduce cholesterol and improve heart health. Because of their high fiber content, the tiny little seeds can hold up to 20x its weight in water! When mixed with something ‘liquidy’ the seeds will plump-up, absorb excess moisture and start to gelatinize. Mixed with pureed fresh fruit, makes for a perfect jam!

Guilt-Free Blueberry Jam

Ingredients:

  • 1¼ cup fresh wild blueberries (or other berries/fruits such as strawberries, peaches, fresh apricots, etc)
  • 1 heaping Tablespoon Chia Seeds (can be ground or whole seed)
  • ½ tsp vanilla
  • 1 tsp coconut sugar (optional)

Directions:

  • puree ¾ cup of berries in food processor with vanilla (and optional coconut sugar)
  • Pour into bowl and stir-in remaining whole berries and Chia until well combined
  • Cover and refrigerate overnight. While you’re sleeping – the chia will begin to gelatinize, turning your fresh berries into even MORE of an antioxidant-rich goodness!

      How long can we keep the jam with chia in the fridge? Is there any way to make preserve out of it?
