This Strawberry Mousse is so rich and creamy, yet diary-free and packed with nutrients to keep your appearance youthful!  Strawberry and Camu Camu are few of the highest sources of Vitamin C, which strenghtens collagen, keeping skin toned and youthful. Plus the healthy fats in the cashews helps to keep skin moisturized from the inside out!

Ingredients

      • 4 cups whole strawberries, hulled
      • 2 cups cashews
      • 1 banana
      • 1/4 cup tablespoons coconut sugar
      • 2 teaspoons vanilla
      • 2 tablespoons camu camu powder*

1/4 cup water (or as needed)

    • NOTE: If you cannot find Camu Camu powder you can just omit completely

Directions:

Combine all ingredients, including water, in a high-speed blender. Blend, using the plunger, until smooth.  The mixture should be thick, but smooth.  Adjust liquid as necessary.

Pour the mousse into 4 small serving bowls and refrigerate for at least 1 hour.

Serve chilled, garnished with mint sprigs and sliced fresh strawberries.

  2. WHAT IS CAMU CAMU POWDER AND WHAT CAN I SUBSTITUTE IT WITH FOR THE STRAWBERRY MOUSSE RECIPE IF I CANNOT FIND IT. I LOVE YOUR SHOW AND I DVR IT EVERYDAY. YOU ARE AWESOME.
